Warm Brocolli and Tomato Salad


















Warm Brocolli and Tomato Salad

4 cups broccoli florets
2 cups cherry tomatoes, halved
1 cup spinach
1/2 cucumber, diced
Juice of 1 lemon
1 tablespoon olive oil
2 tsp dried oregano

Very lightly steam the broccoli, until it is just tender
Mix all of the ingredients into a bowl, stirring in the lemon and olive oil
Season lightly and serve while the broccoli is still warm. Voila.
