NutraSweet Shown to Cause Cancer

You may recall the work of Dr. Morando Soffritti and his international team of researchers who uncovered the link between aspartame and leukemia. Last fall, we received the first tidbits about his long-term study of aspartame on rats and more horrible health risks.
Finally, Dr. Soffritti's final study is available (free study link below), and the news is as bad as one could expect. The carcinogenic effect of aspartame was found at levels as low as 400 parts per million, or about 20 milligrams a day for humans. No surprise, that's far lower than current daily limits in America (50 milligrams) and the UK (40 milligrams).
Considering more than 200 million people consume aspartame in their foods, drinks, vitamins and toothpaste, among other things, and their exposure to it begins in the womb, there's no telling how big the problem truly is.
Will Dr. Soffritti's latest findings provoke far more scrutiny about the debatable safety of artificial sweeteners, especially among its defenders -- think former G.D. Searle CEO Donald Rumsfeld? With people more aware unnaturally sweetened diet soft drinks can double their obesity risks, I certainly hope so.

Broccoli Pancakes

Broccoli Pancakes: "Broccoli Pancakes
Even if your kids don't like broccoli, they will eat these pancakes. You can serve them as a side dish with the Thai Shrimp Brochette, alongside the Mock Sour Cream; however, they are certainly a meal on their own if you want to serve them as an entree."

1 large head broccoli1/4 cup coarsely chopped onion1/2 small hot chili pepper or 1 teaspoon chili paste1 large garlic clove, peeled and sliced1/4 cup vegetable oil2/3 cup whole wheat pastry flour1/8 teaspoon dried dill weed1 pinch salt1 large egg or 2 egg whites1/4 cup low-fat milkA sprinkling of paprikaMOCK SOUR CREAM1 cup plain non-fat yogurt1 tablespoon freshly squeezed lime or lemon juice1/2 small onion or large shallot, finely chopped1/2 teaspoon Tabasco sauce, or to tasteSprinkling of chopped fresh dill

1. Cut the florets off the head of the broccoli and separate them by cutting the large ones in half so they are all more or less the same size. You should have about 3 cups. Discard the stalks, or save them along with any remaining florets to use in soup or a vegetable stir-fry.2. Bring 1/2 cup water to a boil in a medium pan, then drop in the broccoli florets, cover, and let steam as they cook, for 3 minutes. Strain in a colander.

3. Put the steamed broccoli, onions, chili and garlic in a food processor and pulse on and off to chop (do not puree the vegetables), or chop by hand. Transfer the chopped ingredients to a mixing bowl and stir in the oil, flour, dill, and salt. Add the egg or egg whites and milk and mix thoroughly with a wooden spoon. 4. Smear the bottom of a large, nonstick skillet with 1/4 teaspoon of butter and set it over medium heat for about 1 minute. Drop tablespoons of the batter into the hot skillet, placing them far enough apart so that the pancakes don't touch, and cook over low to medium heat for about 1 minute. Turn the pancakes and cook the other side for 1 minute. Transfer them to a hot platter to keep warm while you continue making the rest until all the batter is used up.5. Mix all of the ingredients for the Mock Sour Cream together and spoon 1 teaspoonful on top of each pancake, then top with a sprinkle of paprika.
Makes 20 1-inch pancakes - 2 per person.

Braised Red Cabbage

Braised Red Cabbage: "Braised Red Cabbage
Red cabbage is just like green cabbage in taste and texture, but with the added benefit of powerful antioxidants called anthocyanins that give the redhead of the vegetable world its distinctive color. Red cabbage is also one of the cruciferous family of vegetables – all are rich in fiber, vitamins (most notably vitamin C), minerals like potassium and calcium, and cancer-fighting compounds called indoles. (Other cruciferous vegetables include Brussels sprouts, broccoli, kale, and chard – all are delicious.) Be prepared when cooking red cabbage for the color to “bleed” into the other ingredients. The acidic vinegar and wine in this dish keep the cabbage a beautiful purple color. Without the acid, the cabbage will turn blue. This dish is a taste sensation and makes a great side dish with salmon or as a warm appetizer salad. And considering the very affordable price of cabbage, it can't be beat. "

1 tablespoon extra-virgin olive oil1 large yellow onion, chopped2 large carrots, peeled and sliced1 large head red cabbage, cored and sliced 1/4-inch thick1 large green apple, peeled, cored, and diced3 large cloves garlic, pressed1 bay leaf 1/4 teaspoon ground cloves1 1/2 cups dry red wine1/4 cup red wine vinegar2 tablespoons light-brown sugar1 cup peeled chestnuts (optional)Salt to taste1. In a large pot, heat the olive oil. Add the onion and carrots and sauté over medium heat until onion is translucent. 2. Add the cabbage and apple and mix well, then add salt to taste, the garlic, the bay leaf, cloves, wine, vinegar and sugar. 3. Bring to a low boil, cover, and cook for about 1 hour. 4. Remove bay leaf and correct seasoning to taste. You may also add the peeled chestnuts to cook in the braising liquid.

Acne

Acne: "In most people acne is more of an annoyance than a calamity, although rare forms of it can cause serious disfigurement and scarring.

Acne is the result of overactivity of oil glands in the skin, usually because of increased hormonal activity in adolescence. It is a very common disorder of the skin of the face, shoulders and upper back, worse in males than in females. Infection is not the primary cause, and long-term treatment with tetracycline and other antibiotics should be avoided.

Diet is also not the major determinant of acne, but it is important to avoid high-fat foods and iodine (found in shellfish and iodized salt). Clean the skin regularly with soap and water as well as with the special acne formulas containing benzoyl peroxide. This is an excellent cleansing agent and the active ingredient of many lotions and creams, both over-the-counter and prescription varieties. Do not use any skin products containing oils or dyes.

A good herbal treatment for the skin is calendula, commonly known as pot marigold. (It is not a true marigold.)

Calendula is a popular ornamental plant that you can buy for your garden at most nurseries in the spring. Its bright orange flowers can be made into tinctures, lotions and creams. Try washing your skin with tea made from the flowers, or buy ready-to-use calendula skin products at health-food stores. Most cases of acne will disappear by themselves at the end of adolescence, but if acne persists or becomes severe, it should be treated more aggressively to prevent scarring. Highly effective drugs, derivatives of vitamin A, are available.

Tretinoin (Retin-A) is a topical preparation, while isoretinoin (Accutane) is for internal use. These drugs are safe when used under the supervision of a dermatologist but should not be used casually because they can be irritating and toxic. Some very good Chinese herbal treatments for acne are available, both topical preparations and pills. Sudden appearance of acne in adulthood may be a sign of hormonal imbalance or drug toxicity (usually from steroids). Get a medical checkup to rule out these possibilities. "

Acid - Alkaline Balance and Health

There are a lot of books out these days that recommend making your diet more alkaline to improve your health. While I do think acid alkaline balance is important in a person's diet, I always find these books a bit odd, because most of my past health problems stemmed from being too alkaline.

I started testing my urine pH years ago before it was "trendy" to do so. In my case my urine pH was out of the normal range on the alkaline side of the scale. Other family members had the same problem. When I switched my family to a more acidic diet, our bladder infections cleared up and both of my children's adult teeth started coming in all of a sudden.

I suspect that previously my children had been suffering from delayed dentition because their bodies didn't have the right nutrients, or perhaps their bodies were not able to absorb the right nutrients to form their adult teeth, due to a lack of stomach acid. I noticed many of their allergies and chronic sinus and ear infections also cleared up as their diets became more acid.

So for the last ten years or so I've been a firm believer in the value of acid - alkaline balance in the diet through first morning urine testing. I know a lot of traditional Western doctors feel this isn't helpful, but these are the same doctors who were putting my kids on endless cycles of antibiotics for years that did more harm than good.

So I do feel in situations like this it is better to trust my own judgments than to blindly follow authority figures' advice, especially when that advice has harmed myself and my children in the past with unnecessary drugs with nasty side effects. Urine testing is inexpensive, easy to do, and seems to help with health issues based on my personal observations. I can't think of any downside to having my urine pH in the normal range.

Listed below are the correlations I've noticed between health issues and out of range urine pH with myself and other family members.

When the urine is too acidic, my family seems to also have many many of the following conditions:
  • High blood pressure
  • Headaches
  • Acid reflux (heartburn)
  • Acid indigestion
  • Hot flashes
  • Night sweats
  • Heat rashes
  • Motion sickness - (I think movement sloshes the excess acid around in the stomach making people more easily nauseous)

In Ayurvedic (traditional Indian) medicine, an overly acid condition is associated with a pitta dosha. After taking my son to endless traditional and holistic Western doctors, we found the answers to my son's night sweats and stomach aches on the Internet in Ayurvedic web sites.

He fit the pitta dosha descriptions perfectly, and the recommended diets to balance a pitta dosha put him on the road to recovery. (The traditional yoga diet, which emphasizes a diet high in fresh fruit and vegetables, istend to be an alkaline diet.)

When the urine is too alkaline, I've noticed the following conditions seems to develop:

  • Bladder infections
  • Allergies get worse
  • More sinus infections, colds
  • Diarrhea / upset stomachs
  • Athlete's foot fungus
  • Itching
  • Mold allergies

Please note most of the above lists are not taken from any books or studies - they are just my personal observations of what happens to my family when their urine pH gets out of normal range.

I think when we don't have enough acid it makes it easier for bacteria and fungus to thrive, hence the onset of bacterial and fungal related conditions. So I certainly don't agree with most of the popular books out today that everyone need to be more alkaline. There is a condition called alkalosis that can occur when body fluids become overly alkaline. Medical symptoms of alkalosis include muscle twitching, spasms, lightheadedness, confusion and tremors.

However being too acidic seems to have it's own issues, including a condition called acidosis. As such, I suspect it is probably best just to strive for a normal range.

Many holistic doctors recommend saliva or urine testing to determine your pH levels, but I've personally never found any correlation between health issues and saliva pH. Urine pH is the one measurement I've found most helpful.

Non Food Substances That Can Make Urine Acidic

Antibiotics - antibiotics destroy both the bad and the helpful bacteria in the intestinal tract. Some of the helpful bacteria work to create an acidic environment in the human body. When these bacteria are eliminated by antibiotics, urine may become more alkaline. I think this is one reason why women will frequently get bladder infections after taking antibiotics.

I have some old nutrition text books, and in the era before wide spread antibiotic use, health care professionals often advised people suffering from urinary tract infections to eat a lot of meat and other acid forming foods. A lot of doctors of today think acid-base balance is a lot of malarky, but thirty years ago you could actually find this type of knowledge in some college nutrition books.


Most mineral supplements - especially calcium, potassium, iron and magnesium. Calcium and magnesium are common ingredients in antacids as they neutralize stomach acid. Some people get upset stomachs (gas, bloating, diarrhea, malabsorption) from these types of mineral supplements, especially if they suffer from hypochloridia (low stomach acid) or acloridia


Antacids - Antacids, which often contain magnesium or calcium supplements, may cause an increase in the alkalinity of the urine, which can lead to bladder infections as bacteria tend to thrive in alkaline environments.


Hard Water - Hard water is just the opposite of soft water. It is water that has a high mineral content, and as a result tends to be more alkaline.

Non Food Substances That Can Make Urine Acidic
Probiotics - These are supplements that contain "helpful bacteria". These type of beneficial bacteria help to create an acidic environment in your digestive tract.

Probiotics are often used after taking antibiotics and may help some cases of bladder infections, irritable bowel syndrome and diarrhea. My friends and family have noticed that if we take excess amounts of probiotics it may cause heart burn and/or high blood pressure. (See my related section on IBS Treatment.)

Soft water - Soft water is water that is low in minerals. This type of water tends to be more acidic.

Low Cholesterol May Raise The Risk of a Cancerous Stomach.

Why?

Because cholesterol is a major buffer of dietary and metabolic acids that can cause the breakdown of cells and tissues leading to a cancerous state.

It is the stomach that produces the body's number one acid buffer - sodium bicarbonate.

When the body needs more sodium bicarbonate to buffer dietary and metabolic acid there is an equal amount of hydrochloric acid that is secreted into the stomach.
The newly created sodium bicarbonate by the stomach is either used to buffer the acids of food in the stomach or taken up into the blood stream to buffer metabolic acids when cholesterol is not present.

Bottom line, it is the body's increased need for cholesterol to buffer acids in the extracellular fluids. When cholesterol is not present to buffer dietary or metabolic acids then the stomach kicks in and starts producing sodium bicarbonate.
This process leaves toxic hydrochloric
acid in the gastric pits of the stomach that can destroy stomach cells leading to ulcerations and a cancerous stomach.

Japanese researchers are suggesting that people with very low cholesterol levels seem to be at increased risk of developing stomach cancer. This is because of the body's increased need for sodium bicarbonate and the residues of hydrochloric acid that is left to ferment the stomach leading to a cancerous stomach.

Some studies have linked low cholesterol levels to higher death rates from cancer in general, Dr. Kouichi Asano, of Kyushu University, Fukuoka, and colleagues explain in the International Journal of Cancer.
"With respect to gastric cancer, a limited number of studies suggest this inverse association, while others do not."

The researcher looked into this in a study involving some 2,600 residents of Hisayama, Japan, who were followed for 14 years.

Gastric cancers developed in 97 subjects. After accounting for age and gender, stomach cancer rates rose significantly with descending cholesterol level.
For example, among subjects with the highest cholesterol levels, the gastric cancer rate was the equivalent of 2.1 cases per 1000 persons per year; among those with the lowest cholesterol, the rate was 3.9 per 1000 person-years.

"Our data suggest that patients with low serum cholesterol should consider regular gastro-intestinal examination for the prevention of gastric cancer,"
the investigators conclude.

To prevent a cancerous condition, including stomach cancer one needs to include liberal amounts of sodium chloride (salt) and medium and long chain fats.

According to Dr. Robert O. Young, a research scientist from the pH Miracle Living Center, states, "the stomach is an organ of contribution not an organ of digestion. Its main contribution to the health and well-being of the body is to produce alkaline salts of sodium and potassium bicarbonate.
The purpose of the stomach in producing these alkaline salts is to buffer the acids of diet and metabolism for maintaining the alkaline design of the body fluids and thus protecting the alkaline integrity of the cells."

"To prevent and/or reverse a cancerous condition one must incorporate liberal amounts of sodium and potassium bicarbonate and good healthy fats."
